<br />FOOD SERVICE CONTRACT BETWEEN CASS COUNTY <br />AND CBM FOOD SERVICE <br /> <br />This contract is made and entered into this __ day of March, 2007. by, and. between, Cass County <br />(hereinafter referred to as "County"), business address 211 9th St. S . Fargo. North Dakota 58107 and CBM <br />Food Service (hereinafter referred as "Contractor"), business address 22] 9 East Benson Road, Sioux Falls, <br />SD 57104. <br /> <br />WHEREAS, Cass County in the State of North Dakota, operates and maintains the Cass County Jail and <br />the Cass County Juvenile Detention Center and desires to contract for feeding services with the Contractor. <br /> <br />NOW THEREFORE, Cass County and CBM Food Service agree to the following: <br /> <br />1.1 Food and Supplies <br /> <br />1.1.1 Procurement of Food <br />The Contractor shall maintain rigid procurement procedures throughout the entire <br />process of purchasing. receiving, storage, and inventory of all foods. <br /> <br />1.2 Frequency of Meals <br />The Contractor shall provide three (3) meals per day including two (2) hot meals and one ( I ) <br />cold meal The Contractor shall provide a sack lunch to inmates who miss the service of the <br />regularly scheduled meal and to those on Work Release or in Court. Snacks and nutritional <br />supplements will be charged separately. The Cass County SheritTOffice shall provide the <br />number of meals to be prepared for each meal/sack lunch/snack within 1 Y2 hours prior to <br />meal service which will be called the "Census Count". Billings will be based on a per meal <br />basis utilizing the "Census Count" or "Actual Meal Served Count". whichever is greater; <br />except breakfast which will be based on "Actual Meal Served Count" as pre-prepared bag <br />breakfasts will be used. <br /> <br />1.3 Menu Cycles <br />Meals provided by the Contractor shall follow an approved menu cycle, pre-approved by a <br />dietician registered with the State of North Dakota, with a minimum cycle length of four <br />weeks. Cycle menus shall be changed a minimum of two times per year. A nutritional <br />analysis of each menu cycle shall be submitted to the County to verify that nutritional <br />standards are being met. CBM Food Service will be responsible for the Dietician. <br /> <br />1.4 Menu Planning <br />Menus shall be planned by the Contractor in accordance with the National Research Council <br />and the recommended Dietary Allowances (RDA) to meet the nutritional needs of the <br />individuals. The menus of the Cass County Corrections shall have an average caloric base <br />of 3000 calories per day. <br /> <br />1.4.1 Nutritional requirements <br />(I) Menus will provide a weekly average of 3000 calories per day in addition to all <br />required nutrients <br />(2) Menus will provide a weekly average ono grams of protein per day. This will <br />be met by providing a minimum of 4 oz of meat or meat equivalent per day. <br />
