Laney, Sheriff <br /> <br />July 10,2007 <br /> <br />Robyn Sorum, Portfolio Commissioner <br />Cass County Commission <br />Cass County Courthouse <br />Fargo, ND 58103 <br /> <br />RE: Food Equipment, Jail Kitchen <br />Action Requested <br /> <br />Dear Commissioner Sorum: <br /> <br />Our office is requesting approval to purchase some additional jail kitchen equipment that is necessary <br />to keep pace with our growing facility. CBM Food Services is required to provide meals that are <br />ready at established times and within a specific temperature range. This has been difficult at times due <br />to a lack of food equipment available to handle the large number of meals prepared on site. <br /> <br />The jail kitchen is in need of additional convection oven space as we currently have only two single <br />rack ovens. We propose adding a double rack convection oven next to the existing ones where another <br />gas connection is available. There is also no gas griddle in the jail kitchen which has presented some <br />challenges for CBM and they have requested that the Jail consider adding one. There is space <br />available for a gas griddle next to the current gas stove. The griddle would utilize an existing gas <br />connection formerly used by a deep fat fryer. Much of CBM' s food preparation requires the use of a <br />mixer and our current 20 quart mixer is inefficient for mixing the quantities required by their menus. <br />Weare proposing adding another 40 quart mixer. <br /> <br />Finally, we are requesting approval to purchase 350 additional insulated food trays with covers as our <br />cunent ones are nearing five years. The trays are beginning to show their age and there is a risk that <br />minute holes may begin appearing in the insulated seams jeapardizing their safety from bacteria. <br /> <br />Our office is recommending that the cost of the food equipment and trays be paid for from the <br />commissary account.
